There’s not just one type of tree or one type of beer or one type of person. And that’s true about the amazing plants we work with as well. Our product isn’t designed to be entirely homogenous every time but to change and evolve along with the partners we’re working with and the agave they’re caring for. This means that our nectar is produced in the same traditional method every time, but you can look forward to slight variations in each batch that will help you get to know the amazing producers and plants we’re working with. Fall 2024
In September 2024 we got to visit Rancho la Gaspareña where Rogelio and his family have been tending for salmiana agave for three generations. They harvest the aguamiel from these amazing plants by hand and slowly cook it down into a nectar that’s ripe with rich squashy notes and an almost nutty sweetness. Perfect for colder days ahead!
February 2024
We just opened the latest batch from our friend Miguel Angel Aleman Torres. Miguel makes his aguamiel from two different species of agave, Salmiana and Manso. That means you can expect the same earthy fruity calling card you know us for, plus a light savory note that would make this absolutely phenomenal in a glaze for wings, ribs, or anything going on that first grill of the year!
